Have you ever seen the filmmaking technique where the story starts out in black and white (or really drab, muted colour wash) to convey that the protagonist is isolated and lonely and depressed, but then he sees the woman of his dreams and falls in love at first sight and everything suddenly transitions to full bright colour? That's what the song is going for, and it's exactly why "grey" is not impossible to make sense of: the kiss from the rose is brightening his world from grey to vibrant. "Now that your rose is in bloom, a light hits the gloom". "My eyes become large and the light that you shine can be seen".
